Brown Rice & Beans Salad with Pork Tenderloin on top

Ingredients

  • 1/2 cup cooked Brown Rice cooked
    See how to cook the rice under subheading: How to prepare
  • 60 g Beans in the can
    Rinse well the beans to take out the excess salt
  • 50 Onion
  • 100 g Cucumber
  • 100 g Tomatoes
  • 6 g Cilantro
  • 1 tsp Paprika

Directions
Cut the tomatoes ,cucumbers, onions in small pieces, chop cilantro.Put them in a bowl.Add the rest of the above ingredients in the bowl.

Pork tenderloin 2oz raw -60 calories
1- Cut pork in thin strips .
2- Season with your favorite pork seasoning .
3- Put the pork in small pan with 3 tablespoon of water over medium burner on high heat setting.
4- Cook covered for 4 minutes. During cooking mix twice .
5- Add the cooked pork to the bowl.

Dressing 

  • 15 g Avocado
  • 1/4 tsp Salt
  • 1 Tbsp Apple cider vinegar
  • 3 Tbsp Water
    Mix all together in a blender until creamy.
    Pour the dressing over the ingredients and mix well.

Calories : Brown Rice 85 , Beans 65, Onion 21 , cucumber 12, tomatoes 18, pork tenderloin 60, avocado 24. Total Calories 285
