1-Mini colored peppers 85g (30 calories)
2-Garlic clove 1
Tofu mixture ingredients
1-Firm Tofu 3oz (70 calories)
3-Dry parsley 1/4tsp
4-Dry oregano 1/4tsp
5-Apple cider vinegar 1/2tbsp
Put the above ingredients in a blender.Blend until creamy.
Cut mini peppers in rounds as seen in picture above.
Put peppers in a medium sauté pan ,with 3 tbs water ,over medium burner.
Cover and cook in high heat until the water evaporates,around 3-4 minutes.
Right away add in the pan the mixture of tofu and garlic.
Lower heat to medium .
Keep cooking covered for another 4 minutes.
Take out from pan the cooked mixture .
Add in the pan 2 tbs of water.
Scrape with spatula and mix the tofu that is stuck in the pan with the water.
Pour that liquid over the peppers.
