Mixed Bean salad

Beans Ingredient

  • 80g Black beans
  • 40g Garbanzo beans
    I used canned beans . Make sure to rinse them well to take out the extra salt
  • 30g Frozen edemame
  • 45g Frozen corn
    Mix frozen corn & frozen edamame.Place them in microwave for one minute.
    Put all the above ingredients in a salad bowl.

Vegetables ingredients 

  • 50g Onions
  • Chopped small
  • 45g Celery
  • Chopped small
  • 85g Mini colored peppers
  • Chopped small
  • Add the chopped vegetables to the beans.

Dressing ingredients 

  • 25 g Avocado
  • 1 tsp Apple-cider vinegar
  • 1 tsp Rice vinegar
    Double the amount of Apple cider vinegar if you don’t have rice vinegar
  • 1 tsp Smoked paprika
  • 1 tsp Paprika
  • 1/4 tsps Garlic
  • 4 Tbsp Water

Directions
1- Put the dressing  ingredients in a blender and blend well until creamy
2- Pour the dressing over beans and the rest of vegetables,mix well.

Calories : Black beans 86, garbanzo beans 37, edamame 38, corn 40, onion 20, celery 6,  peppers 30, avocado 40 = 297 Calories
