Chicken pot pie soup – 271 Calories / Oil free & Dairy free

Ingredients

Chicken & vegetables -241 calorie
1-Boneless skinless chicken thigh 3oz (120 calories)
*Cut in small pieces
2-Carrots 50g (20 calories)
3-Onion 50g (21 calories)
4-Celery 50g (6 calories)
5-Potatoes 70g (56 calories)
*I used small potatoes with skin but you can use whatever potatoes you have .
6-Frozen peas 28g (18 calories)
7-Garlic 2 large cloves
*minced
8-Season salt or regular salt 1/2tsp
9-Water 5 cups

Directions
Chop carrots,onion,celery,potatoes in small pieces,similar size.
Put all the above ingredients in a medium size pot,on medium burner.
Boil, high heat ,for 35 minutes with the cover half way.
*While the soup is boiling prepare the thickening in order to put it in the last 5 minutes.
After 35 minutes, add the thickening to the soup .
Continue to boil for another 5 minutes.
Turn off the burner.
Cover the pot completely.
Let it stand for another 5 minutes.
Makes 2.5 cups soup.

Thickening ingredients with seasoning (30 calories)
1-Corn starch 1tbsp (30 calories)
2-Cold water 2 tbsp
3-Dry parsley 1/4tsp
4-Dry oregano 1/4tsp
Dissolve corn starch completely in water.
Mix the seasoning in.
