1-Zucchini 100g (9 calories)
2-Carrots 30g (13 calories)
3-Potatoes 70g (47 calories)
4-Onion 25g (10 calories)
5-Brussel sprouts 22g (10 calories)
6-Napa cabbage 130g (25 calories)
7-Water 4 cups
8-Salmon 3oz (145 calories)
*When I use frozen salmon I put it to boil since the bigining with the rest of ingredients. If salmon is not frozen I put it to boil the last 15 minutes of cooking.
Shred the zucchini ,carrots & potatoes
Chop onions in small pieces.
Cut the Brussel sprout in half then cut them thinly.
Cut thinly the Napa cabbage.
Put all ingredients in a medium size pot over high heat in medium burner.
Partly cover the pot.
Boil for 25 minutes .
Take out the salmon & let it cool.
*Add salmon to the soup in the end ,after cutting it in small pieces.
Add the dissolved corn starch with seasoning .
Mix well the soup and continue to cook for another 5 minutes.
Turn off the stove.
Cover the pot completely and let it stand for another 15 minutes.
Makes 4 cups.
Thickening sauce with seasoning -30 calories
1-Corn starch 1tbsp (30 calories)
2-Salt 1/2 tsp salt
3- Dry dill 1 tsp
4-Lemon zest 15g
*I find easier to make lemon zest by grating the lemon after I leave it overnight in the freezer.
5-Lemon juice 1tbsp
Dissolve the corn starch in 4tbsp cold water.
Add the seasoning.
