Brussels sprouts with sweet potatoes & carrots

Brussels sprout with sweet potatoes & carrots

350g Brussel sprouts
When Brussels sprout are small I cut them in half like in the picture, but if they are bigger I cut them in quarters
300g Sweet potatoes
I peel of the skin and cut them in half and after thin slices which makes it easier to cut with wavy knife like in the picture
130g Carrots
I use the same method to cut carrots as the sweet potatoes.I buy large carrots but if you only have baby carrots is ok ,just cut them in half and after with wavy knife cut similar size to the sweet potatoes.
2 Tbsp Cooking oil
1 tsp Garlic salt or regular salt

Directions
Put all the cut vegetables in a medium baking pan.
Add salt and oil and mix well as seen in the picture below.

Bake in 375 degrees preheated oven for 25 minutes.
Mix the vegetables and continue to cook  for another 20 minutes.

Calories: Brussels Sprouts 160, Sweet Potatoes 258, Carrots 56, Cooking oil 240. Total Calories = 714
Yields around 3 cups of cooked vegetables, 119 calories for 1/2 cup.
