Comforting breakfast :Corn meal with egg

Delicious corn meal with egg and topped with cheese & beacon

In less then 10 minutes you can make this delicious comforting breakfast.

Food for thought: When we try to loose weight often we think that we can’t have any comforting foods at all . As you try to improve your eating habits have you ever made this statement : “ I will never eat this or that food until I reach my weight loss goals ”. Don’t know about you, but as for me , that pushes me to think even more about the foods that I am depriving myself instead of thinking about the new delicious foods that I am adding to my diet. I have chosen to don’t make that self defeating statement anymore . On the other hand, having the choice to have comforting breakfast like this , helps me to don’t feel deprived or unhappy with my food choices which in turn have helped me be successful in reaching  and maintaining my goals .

Ingredients

  • 3 tbsp Corn meal – Dissolve the corn meal in 3tbsp of cold water
  • 1 Egg
  • 1 oz Cheese  –  I used part skim mozzarella cheese but you can use your favorite as long as the calorie intake is the same
  • 2 slices cooked Beacon – Cook  beacon a day before so is less work in the morning. Also I find it easier to chop when cooked beacon is cold.
  • 1/8tsp Salt – optional, since  you are adding cheese and beacon that have salt.

Calories – Corn meal 90 calories, egg 70 calories, cheese 90 calories, beacon 70 calories. Total calories 322

Direction

1- In a medium sauté pan put 1cup of water .
2- Put the pan over medium burner on high heat setting. Let it come to a boil , around 1-2 minutes.
3- Lower the heat to medium high and put the dissolved corn meal and mix well. In this time add most of the cheese. Leave only 1 tbsp of cheese for the topping. Let it come to a boil again and let it boil for 1 more minute.
4- Remove the pan from heat and crack the egg in the middle of the pan as seen in the picture below. If you find it easier you can crack the egg in a bowl and after let it slide in the middle of the pan.
5-Lower the heat setting to medium. Put the pan over the heat and cover for 5 minutes . The steam that creates will cook the egg.
6- Remove the food with a spatula and sprinkle on top the rest of the cheese and chopped beacon.

As a side point: If you  like the corn meal to be less thick you can try next time to add more water, according to your liking. In picture below I used more water 1.5 cup of water instead of one cup. When I cooked this recipe for myself I don’t add cheese. I gave you a idea for breakfast. I would like to hear from you on how you make this dish your own.
