Cold yogurt soup

This recipe reminds me of summer since is light and refreshing . You want to make such recipes in hot days of summer.

Cold yogurt  salad


  • 1.5 cup of plain Yogurt
    I used Greek yogurt. Since the yogurt is thick I mixed it with water. Use a whisk to mix the yougurt with 1 cup of Water in a mixing bowl.
  • 100g Small diced Cucumbers
  • 100g Small siced Zucchini
  • 1 medium minced smal Garlic clove
  • 1.5 Tbsp of olive
    Use 0.5 Tbsp to sauté zucchinis and the rest for the soup.
  • 1 Tbsp of lemon juice
  • 1 tsp of garlic salt or regular salt.



1- Sauté in high heat in a wok , preferably, or pan the diced zucchinis until nice brown color . It takes just few minutes
2- Mix all the ingredients together .If you will not serve right away make sure to refrigerate.
If you like the way I served it make sure to leave a little oil and a tablespoon of zucchinis & cucumbers on the side so you can add on top .
You also can add some dry dill , or fresh choped dill preferably.

Serving suggestions: Tastes great with meat pie or other vegetables or cheese pies. In the future I will post more recipes of those pies.
