  • 1/2 cup Oven Roasted Brussels sprouts, sweet potatoes & carrots
  • 1/4 cup oatmeal
  • 2 Eggs
  • 3 Tbsp Water
  • Seasoning of your choice , salt , pepper, oregano, parsley etc.

I use two methods to make frittata.
First method
Turn the oven to broil.
In a medium baking pan put the roasted vegetables then oatmeal.
Add the eggs that are mixed well with water and the seasoning.

Put the baking pan in a oven for 6 minutes in the middle rack.
Don’t put the rack any closer to the broil.
After 6 minutes take out of the oven.
This is one serving , so when is safe to handle i cut it in 4-8 pieces and serve it in the same dish.

Second method
Put the oven rack on the second to the highest spot.
Turn the oven to broil.
Instead of the baking pan you can use a sauté pan .
Put the mixed vegetables with the oatmeal in the sauté pan.
Put the pan over medium high heat until gets hot.
Add the mixed eggs.
Leave the eggs to cook for 2 minutes until the bottom of the eggs becomes firm.

28ADE351-6B06-4B99-9561-C79BDC3F378CPut the sauté pan in the oven for 2- 3 minutes or until you see nice brown color. Since this time the sauté pan is closer to the broil make sure to don’t leave it for to long so the frittata does not get burned. Take it out of the oven and let it cool for few minutes. Since I don’t put any oil on the pan , before i take the frittata out I go around the pan with spatula to loosen . Then I cut the frittata in 4 pieces before I take each piece out.

Calories: Vegetables 120, oatmeal 75, eggs 140. Total Calories 335.

As a side point : To keep it low in calories I don’t add any oil or butter in the bottom of the pan since the mixed vegetables are cooked with oil. But if you like you can spread butter or oil in the bottom of the baking pan before you add the vegetables and eggs. Make it more hearty and add your favorite cheese or pieces of ham, cooked turkey or chicken. You can serve it with avocado or salsa. Also instead  of of mixing the vegetables with oatmeal you can mix it with almond flour or ground chia & flax seeds.
