Tortilla pizza

If your kids don’t eat Brussels sprouts they will eat them without  never knowing. Blending the right amount of Brussels sprouts in their favorite tomato sauce will help mask the flavor of Brussels sprouts. It helps also that you serve it on the  tortilla with cheese which is similar to most kids favorite food , pizza.


1/4 cup Roasted Brussels sprouts with sweet potatoes & carrots
1/2 cup your favorite tomato sauce
Mix the vegetables and tomatoe sauce in a blender. Yields 7 Tbsp sauce.
1 ounce Mozzarella cheese
1 ounce cooked chicken or favorite topping
2 pieces of tortilla

Put a medium sauté pan over a medium size burner on medium high setting.
Put one of the tortillas  in.
Spread 3 Tbsp sauce on the tortilla.
Add the cooked choped chicken and the cheese.
If you want the pizza to be with just one tortilla keep the tortilla on the pan for 3-4 minutes and after take out.
If you wanted to make it double pizza put the second tortilla over , right after you add the cheese to the tortilla in the bottom.
After four minutes turn the tortilla over with a spatula and cook on the other side for 3-4 minutes or until the tortilla is nice brown color.
Take out and let it cool in a rack before you cut it in four pieces.
Personally I prefer the double tortilla pizza since for the kids it is more filling and easier to hold.
