- 2 store bought Pie crust
- 100g Feta cheese
- 250g Chopped Onion
- 7 cups chopped spinach
- 2 Tbsp Cooking oil
- 1 Tbsp dry parsley
1- Put the onions & oil in a medium size pan over a medium size burner, high heat setting.
2- Mix onions well and cover pan completely.
3- Cook for a total 8 minutes or until onions are light brown color. Mix well every two minutes.
4- Add spinach 2 cups at a time. Mix well and soon spinach wilts add remaining spinach. Since you are not cooking the spinach but just sautéing all this process takes only few minutes.
5- Add parsley and crumbled feta cheese. Mix well with spinach.
Arrangements and baking
1- Put one pie crust over a 9 inch pie baking dish. Add the filling in as seen on the picture above .
2- Cover with the other pie crust. Tuck together the corners from both crusts. If you don’t like the excess crust all around you can take off some and just pinch both crusts together instead of tucking in the crust.
3- Make few slits as seen in the picture above in order for the warm air to escape. I decorated the pie all around by making few lines with the tip of butter knife.
4- Bake for 35 minutes in 450 degrees preheated oven until golden brown.
5- Take out of the oven. Let it cool until safe to the touch and cut in 8 pieces.
Calories: 2 Pie crusts 1600. Cooking Oil 240. Onions 105. Feta cheese 264. Spinach 42 : 2251 Total Calories . 1/8 of the pie is around 281 calories.
