Cucumber zucchini salad

Don’t know what to do with the extra zucchini’s and cucumbers that you have planted or bought ? This is one suggestions that needs no cooking . Use the same ingredients to make a delicious salad or refreshing cold soup .


1/3 large zucchini
1/2 small yellow squash
1/2 large cucumber
2 medium radishes
2 ounces avocado
3 ounces firm tofu
1 Tbsp olive oil
1 Tbsp apple cider vinegar
1/4 tsp salt
1/4 tsp dry oregano
1/4 tsp dry parsley

Dressing or soup directions

1/4 cucumber
1/4 zucchini
1/4 yellow squash
1 radish
1.5 ounces tofu
1 ounce avocado
1/4 tsp salt
1/4 parsley
1 Tbsp apple cider vinegar
1/4 oregano
2/3 water

Mix well in a blender all the above ingredients. until creamy. Yields almost 1.5 cup of dressing. You can save the unused dressing in the fridge for at least 3 days. Add more salt , vinegar or the seasoning according to your liking. If you have fresh herbs feel free to use them instead of the dry ones . This is the time that you can taste and decide if you like to add to the blender all the rest of the ingredients and make them as a soup or just want to cut the rest of the ingredients and add over the dressing that you made and enjoy the salad.

If you chose to use all the ingredients to make the soup add extra water and seasoning accordingly.

Side note: I cut the vegetables with the wavy knife. If you don’t have tofu you can add extra avocado to help with the creamy consistency. On my soup I added basil . Try your favorite herbs and figure out what you like best.
