You will definitely want to make this patties. They are delicious and liked by everyone who tries them. If you have kids they will like them too .
3 medium potatoes
1 cup thawed mixed frozen spinach & kale
1 large carrot
70 g feta cheese
3 minced garlic cloves
1/3 cup flour
1/4 tsp salt
1/2 tsp Parsley and oregano – optional
3 – 6 Tbsp cooking oil
Boil the potatoes halfway and cool them off.
Thaw the spinach & kale and drain well .
Shred carrots, potatoes and cheese as seen on the picture.
Mix all the ingredients until you make a lump as seen on the picture.
Add the first 3 tablespoons of oil in a medium nonstick pan.
Put the pan in high heat over medium burner. Put the mixture to fry one tablespoon a time.
When they look brown and crisp turn the patties on the other side . Repeat the process until all the patties are done. Add oil as needed. Transfer the patties on the plate over paper towel.
Another option: If you don’t want fried patties you can use the same ingredients and make them in a potato spinach & kale pie .
Mix shredded potatoes with the egg and flour . Spread the mixture in a baking dish sprayed well with non stick oil. Mix the spinach & kale with carrots and spread over the baking dish . Add the feta cheese on top . Bake for 20 minutes in 475 degrees preheated oven . Take out and when safe to handle cut in four to eight pieces .
