Grilled or roasted summer vegetables are one of my favorite side dishes but most of the kids will not eat them . This is a easy method that I have used to make it more appealing for them to try .
1/2 medium size sweet onion
2 colored sweet peppers
1/5 of large zucchini
6 Tbsp cooking oil
For the batter
Mix 1/3 cup pancake flour and 1/4 tsp salt with 1/3 cup of cold water until there is no more lumps in the mixture.
Cut the vegetables as seen on the picture below. For the zucchini : cut them thin circles and use a shot glass to take the middle part out.
Put the vegetables inside the pancake batter and mix well until they get lightly coated as seen on the picture below.
Put 6 Tbsp of oil in a large non stick pan. Put the pan over a large burner on medium high heat . Once the oil is hot put the vegetables in. Fry them until crispy on both sides as seen on the pictures below.
When done , put them on the cooling rack over paper towel in order to take off the excess oil .
