As moms, we all want to add more healthy choices to our families meals . We hope that our kids will give these new recipes a try and dream that they will enjoy eating them. This recipe , and other recipes similar to this one, make it easier to introduce new ingredients in the family meals because just by modifying a little the original recipes , you can make another recipe that can be more appealing to the kids.
1cup cooked quinoa
1 large carrot
1 medium cooked beet
1 Tbsp olive oil
1 ounce Avocado
5 leaves of romaine lettuce
Shred carrots with the side of the grater that has the smallest holes. Shred the beet with the side of the grater with the largest holes. Cut fine the lettuce . Before you squeeze out the juice from the lemon grate the lemon in order to use the lemon zest on the salad.
2 Tbsp lemon juice
1 ounce avocado
1 Tbsp olive oil
Mix all the above ingredients in the blender until creamy. Mix well with the rest of the salad ingredients. . Yields around 2.1/2 cups of salad .
Side note : According to your taste, you always can add more salt , lemon or olive oil.
Direction for quinoa patties
1.5 cup quinoa salad
1/2 cup flour
1/2 tsp salt
1/2 beat egg
Mix gently the quinoa salad with the above ingredients until you make a firm lump as seen in the picture below.
Add 3 Tbsp of cooking oil in a medium non stick frying pan. Put the pan in high heat over a medium burner. When the the oil gets hot, start adding in the pan the quinoa mixture one tablespoon at a time.
After the patties get a nice brown color on one side turn them over on other side side , as seen on the picture below. Continue to fry the rest of the quinoa mixture. These patties are not meant to be deep fired so add the oil as needed , one tablespoon at a time. As you take the patties out of the pan put them on the plate over paper towel to take of the excess oil. I was able to make 19 patties.
Side note: Since the quinoa mixture has lettuce you will feel the crunchiness of the lettuce as you eat them . If you think this may deter your kids from trying the patties , skip the lettuce when you make the patties for the kids.
