I grew up eating this delicious recipe on many summer days.This summer I have made this recipe few times already and it is a hit with all the guests. You can make this recipe fancy to impress by cutting vegetables in circles but today I will show you my easy version that anyone can do it. No excuses to don’t make this easy delicious recipe and make good use of summer vegetables that are in abundance.
Ingredientes for Ratatouille
- 1 medium zucchini
- 2 medium eggplants
- 8 mini colored peppers
- 2 cups cherry tomatoes
- 4 large garlic cloves
- 4 Tbsp olive oil
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp salt
- Chop zucchini and eggplants in similar size.
- Cut the peppers in circles .
- Cut the cherry tomatoes in slices lengthwise. I was able to make 3 slices out of one tomato. If you are using bigger tomatoes I will suggest to peel the skin first. For the directions on that you can check in section ” Startup recipes “
- Cut the garlic thinly lengthwise.
Put all the ingredients in a big bowl and mix well with the oil , salt, parsley & oregano . Divide the mixture into 2 baking pans. I used 9 by 5 inches glass baking pans. You need 2 baking pans because you want the ingredients to be one layer and not overlap in order to don’t become saggy.
Preheat the oven 450 degrees and put both baking pans in the oven for 20 minutes
After 20 mix the vegetables well and cook for another 15 minutes.
Take out of the oven and let it cool for 10 minutes before you put into a serving plate.
Serving suggestions:You can use ratatouille to make frittata , serve it as a side dish, serve it over rice , mix it with pasta and chicken or you can serve it as appetizers over crostini.
