As you may know by now , vegetables patties are one of my favorite way to introduce kids to various vegetables . Unbeknownst to them they are eating the same vegetables as you are but in more appealing way for them. This time I have figured out a way to make patties with ratatouille ingredients.
1 small eggplant -125g
1/2 medium zucchini -195g
1 Roma tomato
1 garlic clove
3 mini colored peppers
1/2 slightly beaten egg
1 cup flour
1/2 tsp salt
3 Tbsp cooking oil
1 tsp dry parsley optional
1 tsp dry oregano optional
*I love the flavor that oregano & parsley give to the patties but if you making the patties just for kids I suggest to skip the herbs since the flavor of herbs may deter them from trying the patties. If you make the patties for yourself or as a appetizer for others make sure you add the herbs.
Shred the zucchini and eggplant.
Cut peppers, tomatoes and garlic in chunks and put them in a blender together with the salt. Blend well until becomes a liquid consistency.
Mix all the ingredients with the egg in a mixing bowel
Add flour slowly 1/4 cup at a time .
Mix gently until it looks as in the picture below.
- Cooking directions
In a medium nonstick pan put 3 Tbsp of cooking oil.
Place the pan on a medium burner over high heat.
When the oil is hot, after 1-2 minutes, add the vegetables mixture in the pan one tablespoon at a time. Each time you put the patties in, flatten them as seen in the picture below.After cooking one or two minutes turn the patties on the other side.
- When the patties have a light brown color take them out and place them over paper towel to get off excess oil. Continue to cook the rest of the patties. If you need to add oil, do so 1 Tbsp at a time. I was able to fry 31 patties with only 3 Tbsp of oil. This is how my last batch looks with the leftover oil.
