Soup made with potato salad ingredients

What else you can do with the potato salad ingredients? This delicious and comforting soup is another way to use the ingredients that you already are familiar for this week.


4 medium yellow potatoes
2 cups or 170g frozen string beans
12 small radishes
1 celery stick
1/2 large carrot
1/2 large sweet onion
2 Tbsp cooking oil
12 ounces boneless chicken thighs

Preparation & cooking directions

Cut onions, celery , carrot and radishes small and similar in size.
Cut string beans 1/2 inch length.
Cut potatoes around 1 inch cubes.
In large pot add oil, carrots, celery , onion and chicken.
Put the pot in a large burner over high heat .
Cover the pot and sauté the ingredients for 5 minutes. Make sure you mix every minute.
Add potatoes & radishes.
Cover the pot. Sauté for another 5 minutes mixing it few times .


Add 6 cups of water in the pot; mix well.
Cover the pot halfway . Cook stew for 35 minutes.
After 35 minutes turn off the stove . Cover the pot completely for 10 minutes.
After 10 minutes add avocado dressing; mix well .
Avocado dressing ingredients

1 oz avocado
1/2 Tbsp Dijon mustard
1/2 Tbsp apple cider vinegar
1/2 large pickle
1 radish
2 Tbsp water

Put the above ingredients in a blender and blend until is creamy .
