- 4 Green peppers
- 8 mini peppers
- 1 medium onion
- 2 cups rice
- 14 oz ground turkey
- 2 Tbsp oil
- 4 cups water
- 1 tsp salt
- 1 Tbsp parsley & red paprika – optional
Cut the top of the peppers as seen on the picture below. Put aside 4 green peppers and 4 mini peppers .
Remove the seeds. Cut in small pieces the remaining peeper.
Chop onion in small pieces , similar size to peppers.
Put a large pan over a large size burner on a medium high heat .
Add oil to the pan.
Add chopped onion and peppers to the pan .
Sauté the ingredients for about 10 minuets. Make sure that you mix the ingredients every 2 to 3 minuets, covering the pan in between .
After 10 minuets add the ground turkey.
Mix well and continue to sauté with the rest of the ingredients for another 5 minuets.
Add rice , paprika, parsley, salt.
Use a small spoon to stuff the peppers with the mixture.
Arrange the peppers in a large pan as seen in the picture below. Put the remaining mixture all around and add water .
Put the baking pan on 350 degrees preheated oven.
Bake for 40 minuets and then put lossley over the pan a pice of aluminum foil in order for the rice and peppers to don’t get burn. Bake for another 15 minuets. Take out of the oven .
A note to parents: This dish is a good way to introduce new vegetables like, peppers, to the children. Serve them only the rice mixture. Since the peppers are cut in small pieces and are mixed with rice & ground turkey it will be easier for them to give it a try.
