I love bean & tomatoes salad. Check out the recipe I have posted previously. Last week though I came up with this new presentation of a familiar recipe . I filled rice cups with the salad . Of course it tastes great but also it is nice to look at . They make a great appetizer .
Some directions not included in the pictures: Divide the rice mix in 1.8 Oz rice ball . Place each one of them in well oiled cupcake molds. Press in the middle and then the sides to make the shape. Bake in 500 degrees preheated oven for 30 minutes.
Take out , let them cool completely before filling them .
