This is another delicious and easy way to cook sausages besides the usual recipe of peppers & sausages . You can serve it with your favorite side dish but the above picture is a suggestion.
Sausage preparation & cooking directions
Take 3 Italian sausages and make a cut lengthwise .
Open and flatten them in a large non stick pan by pressing with your hand.
Once flatten gently remove the casing or sausages skin making sure not to break the sausages.
It’s important to do this step in order for the sausages to stay flat and not curl up as they cook.
Put the pan in medium high heat over a large burner.
Cook the sausages 3-4 minutes on each side or until they are a nice brown color.
In the last 30 seconds lower the heat to the lowest setting and add to the pan 2 tsp brown sugar disolved in 3 Tbsp of water.
Move and turn the sausages around so they get even coat of the sweet liquid.
Turn off the burner and place the sausages in plate pouring over them any leftover liquid.
Side note: For me this is enough touch of sweetness but of course if you like more juices you can add more water and brown sugar.
This is a delicious and satisfying recipe for all in the family. I had to improvise using medium size yellow golden potatoes instead of small potatoes. Also I did not use a oven to bake them as it is done usually after you boil them.
2 pieces Ribeye steak – 1 inch thick each
5 medium size golden potatoes
1 Tbsp cooking oil
Preparations & cooking directions
In a medium size pot put 5 potatoes half way peeled as seen in the above picture.
Boil them for 20-25 minuets, depends how big they are.
Rinse in cold water.
When cool and safe to touch cut them in large pieces.
Smash them with the back of a ice cream scoop being careful to don’t brake them in little pieces.
Put the potatoes aside.
Season the steak generously with the seasoning of your choice , plain salt, seasoning salt or steak seasoning.
In a large pan put 1 Tbsp of oil.
Put the pan over a large burner on high heat setting.
Place the steaks in the pan and cook for 4 minuets then turn it on the other side.
Cook for another 3 minuets on the other side. If you like the steak well done continue to cook few more minutes according to your liking.
Take the steaks out and let them rest for 4 minuets before you cut them in slices.
Meanwhile put 3 Tbsp water in the pan.
Scrape slightly the pan with a plastic spatula and take 3 -5 Tbsp of the drippings and mix them in another pan with the smashed potatoes for 5 minuets over high heat.
According to your liking add seasoning to the potatoes . You can add plain salt , rosemary , garlic salt or thyme.
Side note: When you scrape the pan don’t do it vigorously since you may have some spots on the pan that are to dry and turned black. This is also the reason why I use another pan to mix the potatoes.
In the main picture is displayed only one of the steaks and half of the potatoes. I served the steak and potatoes with a side of salad.
Don’t need a grill to make mouth watering ribs . My husbend does such a good job grilling ribs in the summer and my family missed them for the rest of the year . So I came up with this recipe which has been a crowd pleaser. Each time I served the ribs I am asked how did I make them . Here is my method.
1-Pork ribs close to 2 pounds
Put the rack of ribs in a large baking pan.
Season the ribs well as seen in the picture below. Use your favorites pork seasoning or just seasoning salt .
Put the ribs in 500 degrees preheated oven for 25 minutes.
After 25 minutes turn the rack of ribs on the other side.
Let it continue to cook for 20 more minutes.
Preparation for Sweet glaze
While ribs are cooking prepare the sweet glaze .
In a small bowl mix 4 Tbsp brown sugar and with 6 Tbsp warm water. Mix well until the sugar is dissolved completely.
When the last 20 minutes are done take out the ribs and pour the sweet liquid over the rack of ribs. Pictures below shows how the ribs look on both sides after the sweet glaze is poured over. Let it cool for 10 minutes or until safe handle.
1-Lamb chops 8
I buy them in rack and after I cut them individually before I cook them.
Season with seasoning salt according to your taste on both sides.
In a large pan put 1.5 tablespoon of cooking oil.
Put the pan over a large burner,medium high heat setting. Let the oil get hot around 30 seconds.
Arrange the lamb chops in the pan and cook 2 minutes one side and 2 minutes on the other side. After 4 minutes are done remove the lamb chops from the pan in a serving plate as seen in the first picture.
As a side point : The cooking time of 4 minutes all together applies to lamb chops that are not so thick , like the ones you see in picture. If your lamb chops are much thicker of course you have to add more to the cooking time.
Also after taking out the lamb chops put few tablespoons of water in the pan and scrape the pan with a spatula . You will have a nice flavored liquid to put over the plain brown rice which you can serve with the lamb, as a side dish ,as shown in the picture
Ingredients: Two pieces of pork tenderloin 11oz each
1-Cinnamon 1/2 tsp
2-Cumin 1/2 tsp times 2
3-Salt 1/2 tsp
4-Curry powder 1 tbsp
5-Cooking Oil 1tbsp
Put 1 tbsp of oil In a medium size pan. Put the pan over the medium size burners on high heat setting.
Add the pieces of meat in, as seen in the first picture.
Cook for 5 minutes and turn on the other side.
Cook in the other side for another 5 minutes.
Then cook for 3 minutes each, on other two 2 sides, as seen on the picture below (6 minutes total cooking in this position)
In order for the meat to continue to cook in this position, put the pieces of meat close and let them lean on each other.
When the cooking is done ,turn the burner off and move the pan away from the heat.
Add 1/4 cup of water in the pan ,as seen on the picture below
Cover the pan and let the pork rest for 15 minutes. When safe to handle cut the pork and put in serving dish. Pour the flavored juice from the pan over the cut pork slices as seen in the first picture.
As a side point : As you cook the meat make sure to have some ventilation because of the seasoning on the pork and high heat setting it can create some smoke while you are cooking. I like to serve the pork often together with brown rice & bean salad .Both these recipes are crowd pleaser.
